As the temperatures drop and the days get shorter, I find myself making hearty and comforting soups time and time again. Whether you’re craving a creamy mix or something brothy, soups are an easy way to add an abundance of nutritious veggies to your day.
I just love how creative you can be – it’s so easy to make soups richer and more filling just by adding a few delicious ingredients. Here’s how:
- Add a serving of protein:1-2 boiled eggs, a handful of shredded chicken, or a cup of lentils or beans can help you stay energized for longer.
- Add some toast: A slice of seeded toast, sourdough or mine Signature gluten free bread is perfect for dipping and soaking up all those warm goodies.
- Add healthy fats: Try sprinkling goat cheese, feta, or parmesan on top for added flavor and depth. I love throwing in chopped nuts or a dukkah spice mix, or topping my toast with some avocado.
With that in mind, here are 3 soup staples that I have in high rotation this fall:
Tomato Pepper Basil Soup
One of my favourites! The subtle sweetness of the roasted peppers and tomatoes combined with the freshness of the basil makes this soup irresistible and full of flavor. It’s a community favorite and the full recipe can be found Here or in JSHealth app.
minestrone soup (pictured above)
Cozy comfort food at its best – this super filling and high-fiber soup is a classic winter warmer. I added zucchini and carrots to make it even more colorful and nutritious, and pulse noodles (made from legumes) to boost the overall protein content. Make a large batch and enjoy for a few days or freeze in portions for later! Full Recipe Here.
chicken noodle soup: Nothing beats a homemade chicken noodle soup. I like to make mine with lots of veggies – celery, leeks, and broccoli work beautifully. Add some shredded chicken and vermicelli (or thin pasta of your choice) and ladle up a warm bowl! Find the full recipe Here.
