Homemade Peanut Butter Easter Eggs recipe

Skip the store-bought sweets this Easter and make them yourself Peanut Butter Eggs! A super easy recipe to make with your kids. These are very similar to my Homemade Peanut Butter Balls, but in the shape of eggs of course!

Let’s talk peanut butter

I originally used natural chunky peanut butter for these pb eggs, which has worked well for me. BUT I now recommend using it Brands Jif or Skippy. This is because natural peanut butter is so inconsistent. The oil separates and then we all mix it up a little differently. While processed peanut butter just works, every time. Use coarse or smooth depending on your preference.

Use for best results high-quality melted chocolate like Ghirardelli’s melt-in-your-mouth waffles (these come in white, milk, and dark varieties). If you’re in a pinch, chocolate chips with a drizzle of vegetable or coconut oil work, too! I like to use milk chocolate but feel free to use whichever flavor you like best.

A Krispy Variation – Add Rice Krispies Cereal

A fun twist on this classic peanut butter egg recipe is to add Rice Krispies muesli to the peanut butter mixture. This gives it a crispy, airy crunch that I just love.

Bug fix for chocolate dipping

Here are a few tips that I found helpful as I ran into a few issues that you might be having as well.

  • Diving gear: You could use a special dipping tool for these peanut butter eggs, but you could just as easily use a fork! Using a fork can be a bit messier, but it gets the job done.
  • Dilute chocolate: If your chocolate is still too thick to dip, add a teaspoon of vegetable or coconut oil and mix away. Be careful though, if you add too much oil the chocolate won’t stick to the peanut butter egg.
  • For smooth chocolate: You either need more oil OR the chocolate mixture needs some more microwave to melt completely.
  • Chocolate hardens too quickly: First things first, work fast. Second, there’s no shame in putting the chocolate back in the microwave for 10 seconds to loosen it again. You can do it!
  • The filling sticks to my scuba gear: Either the filling is too cold or the chocolate is too hot! Adjust accordingly and try again 🙂

Make peanut butter mixture

Melt in a large bowl peanut butter And butter 1 minute together. Stir to integrate together.

stir in Vanilla Then Powdered sugar, and optional Rice Krispies. The mixture will appear dry but should hold together when you shape it into shapes. This is where you can really get the kids involved.

Shape PB into eggs and refrigerate

Melt and dip chocolate

While the peanut butter eggs cool, melt Chocolate in the microwave on low heat and 30-second intervals, stirring and checking.

Dip each egg in chocolate to cover completely. Remove the egg with a fork and tap along the edge of the bowl to allow excess chocolate to drip back into the bowl through the tines of the fork.

Decorate and cool

Place eggs back on parchment paper and sprinkle with desired toppings. Repeat until all eggs are covered in chocolate. Refrigerate 5 minutes or until chocolate has set.

Peanut Butter Eggs are ready!

Wrap to gift, serve or refrigerate for up to 5 days. And voila! Just like that, you have some peanut butter eggs. 🙂 Yippee!

Store + freeze peanut butter eggs

Store in an airtight container in the refrigerator up to 5 days.

The real beauty of these peanut butter eggs is that they can be frozen up to 3 months! It also means you could have these bad boys ready whenever the craving strikes.

Freeze. Once the eggs are coated, chilled and the chocolate has set, toss in a freezer safe bag and freeze! just right?

To thaw. Simply thaw in the fridge overnight (or at least 8 hours) and then enjoy!

Peanut Butter Eggs

  • In a large bowl, melt peanut butter and butter for 1 minute. Stir to integrate together.

  • Stir in vanilla, then powdered sugar and optional rice krispies. The mixture will appear dry but should hold together when you shape it into shapes. This is where you can really get the kids involved.

  • Using a 3 tablespoon cookie scoop, measure and shape 10 even eggs. Or for smaller eggs, use a 2 teaspoon cookie scoop and shape into 24 eggs. Place on a baking sheet lined with parchment (or waxed) paper. Freeze for 10 minutes.

  • While the peanut butter eggs cool, melt the chocolate in the microwave over low heat, stirring every 30 seconds or so. Dip each egg in chocolate to cover completely. Remove the egg with a fork and tap along the edge of the bowl to allow excess chocolate to drip back through the prongs into the bowl.

  • Place back on parchment paper and sprinkle with any toppings you like. Repeat until all eggs are covered in chocolate. Refrigerate 5 minutes or until chocolate has set.

  • Wrap to gift, serve or refrigerate for up to 5 days.
