Ground Beef Fried Rice – Nicky’s Kitchen Sanctuary

For this flavorful, inexpensive dinner, ground beef is sautéed with hoisin sauce, garlic, lemongrass, and sesame oil until done nicely caramelizedthen it’s tossed with lightly fried egg rice – plus a good handful of frozen peas to add a bit of veggies!
I like to serve this with sriracha and spring onions.
It makes a great, simple and delicious weeknight dinner!

I’m a big fan of fried rice – Fried rice with chicken, Indonesian rice with a lot of spicy taste or fried rice with meltingly tender pieces sticky pork belly – I could eat it most days!
This is my way of making a beautiful one meaty fried ricewith lots of flavor that won’t break the bank with expensive cuts of meat, and it is also quick to prepare.

📋 What do we need?

  • ground beef – I use ground beef with 5% or 10% fat. I made this recipe with 20% fat ground beef, but it makes the rice a little too oily, so it’s better to go for a lower-fat version and then add extra oil as needed.
  • rice – use cooked rice (I have a simple tutorial for here how to cook rice in a pan perfect) then cool it, so that the rice dries out a little. Chilling the rice helps prevent the rice from sticking together and also helps it absorb more flavor.
  • Peas – frozen peas (no thawing needed) are a great addition for a little sweetness. They cook quickly so they can go straight from the freezer to the wok.
  • lemongrass paste – this gives the minced meat a nice taste. I like to use the paste as it’s easier to mix into the beef without the risk of creating the chewy, woody bits you can get with lemongrass sticks.

Mince Fried Rice

Ground beef stir-fried with hoisin, lemongrass and garlic then tossed with lightly fried egg rice – a fantastic, easy and economical dinner for the whole family.

INSTRUCTIONS

  • Heat a wok on high. When hot, add the ground beef and cook for 5 minutes, shredding the ground beef with a spatula, until the beef is browned.

    500 grams of minced meat

  • Add the sesame oil and brown sugar and cook for another 5 minutes, tossing the ground beef in the wok with the spatula. It should get a little darker.

    1 tbsp sesame oil, 1 tbsp light brown sugar

  • Add the hoisin sauce, soy sauce, garlic, lemongrass paste, white pepper, and chilli flakes and stir-fry for another 5 minutes. Periodically agitate the ground beef in the pan.

    2 tablespoons hoisin sauce, 1 tbsp dark soy sauce, 2 minced garlic cloves, ¼ tsp white pepper, 1 tsp lemongrass paste, ½ tsp chili flakes

  • Scoop the ground beef out of the pan and place in a bowl.

  • Put the oil in the wok and heat.

    1.5 tbsp neutral oil

  • Add the rice and peas to the wok and fry for 3-4 minutes, constantly stirring the rice with the spatula in the wok, until the rice and peas are hot.

    800 g (4 cups) cooked and cooled long grain rice, 115 g (⅔ cup) frozen peas

  • Move the rice to one side of the wok and crack the two eggs in the gap. Make sure the part of the wok with the eggs is over the heat and fry the eggs, stirring them with the spatula. This should take about a minute.

    2 eggs

  • Stir the eggs into the rice.

  • Add the soy sauce, salt and lemon juice and stir.

    1 tbsp dark soy sauce, ¼ tsp salt, 1 tbsp lemon juice

  • Return the ground beef to the wok and sear for another 2-3 minutes, stirring with your spatula to reheat the ground beef.

  • Serve garnished with sriracha and spring onions.

Can it be done in advance?
Yes, prepare ground beef fried rice, then spread in a large bowl (so it cools quickly), cover and refrigerate for up to a day. Do not leave cooked rice at room temperature. Bacteria can grow very quickly on cooked rice, so the following is important:

  • chill it as soon as possible
  • Store no longer than 24 hours in the fridge and
  • Thorough reheat.

Heat in a wok over medium-high heat and use a spatula to stir through the pan until hot throughout. You may need to add an extra dash of oil as the rice has absorbed the oil in the fridge.
can i freeze it
Yes, you can freeze this ground beef fried rice.
Cook the rice, then spread it out in a large bowl (so it cools quickly), cover and freeze.
According to the instructions above – do not leave cooked rice at room temperature. Bacteria can grow very quickly on cooked rice, so the following is important:

  • freeze it as soon as possible
  • Thaw in the fridge over night (and do not store for more than 24 hours)
  • Thorough reheat.

Heat in a wok over medium-high heat and use a spatula to stir through the pan until hot throughout. You will need to add an extra dash of oil as the rice has absorbed the oil while storing.

This is a great dish to add to leftovers or any spare veggies you have in the fridge.

  • Substitute ground pork, turkey, or chicken for the ground beef (note that if you have ground turkey or ground chicken, you’ll need to add a drizzle of oil since they’re much lower in fat than ground beef and pork).
  • You can also add ham, crispy bacon and/or cooked chorizo ​​pieces.
  • If you want more veggies, add cooked chopped carrots, sweetcorn, broccoli, mushrooms, snow peas, canned bean sprouts, or canned bamboo shoots.
