Why do I always think of greens when I think of salads? Salads can be anything you want…like fruit and cheese. And burrata cheese is LIFE! I think it might be my favorite cheese of all time. The other day when I really had no idea what I was going to make for lunch, I found some peaches and fresh apricots in the fridge and decided they needed to be made into a meal. It’s not rocket science, you know? I think we tend to overcomplicate things when it comes to meals. All you have to do is place your favorite fruit in a bowl, add something salty like cured meat, then top it with cheese and herbs. It’s the simplest foods that always seem to be the greatest.
Speaking of peaches… I had the most amazing pastry the other day. Probably one of the best baked goods I’ve ever eaten. It was a peach ginger cruffin. Have you ever had a Cruffin? It’s a croissant, but it’s baked like a muffin, which is somehow way better than a regular croissant shape. I don’t mean to be a hater, but I really couldn’t care less about croissants. UNLESS it’s an almond croissant at Maman Bakery in New York. The croissant was amazing. Well I had this Peach Ginger Cruffin from Moon Raccoon Bakery this weekend and it was a thing of sheer beauty. Lush peach jam-like substance filled the crevices of the tall croissant with tiny pieces of candied ginger ready to alter your taste bud expectations. It was wonderful. My sister-in-law got it for me from the farmer’s market and I’ve asked for her to bring me one every weekend now. She agreed and that’s why we’re best friends…she understands me and my needs.
As I am currently feeling somewhat housebound as I sometimes feed our child every hour, I have been watching A LOT of TV lately. I need to download some audio books to listen to because my pediatrician told me today that TV is not good for a newborn. Hooray. I’m still learning this whole thing, I have a newborn living in my house. But food shows were just my happy place. My pregnancy obsession was The Great British Baking Show because it just put me in a good mood every episode. Then I switched to Street Food on Netflix, which makes me want to travel again and eat all the random things. But this season was very short lived so I switched to Somebody Feed Phil and it’s AWESOME. There are like a million episodes in all the different places and all the food he eats looks amazing. I want to see if he has a website with a list of all the restaurants he eats at so I can make visiting those places a priority one day. When that day will be… I have no idea. I’m still nervous about going to the supermarket alone with a newborn, let alone going to another country. But we will get there. Until then, it’s time to download some audiobooks! And eat some more peaches. Kloveyoubyeeeee.
Peach Burrata Salad

- Preparation time: 15 minutes
- Total time: 15 minutes
- Yield: 3–4 portions 1x
For the dressing
- 2 tablespoons fresh mint, chopped
- 2 tablespoons fresh basil, chopped
- 1 Spring onion, sliced
- juice from 1 lemon
- 2 tablespoons olive oil
- pinch of salt
For the salad
- 3 Peaches, sliced
- 3 Apricots, sliced
- 2 ounces sliced ​​ham
- 8 ounces burrata
- 1 teaspoon flake salt
- 1/2 teaspoon black pepper
- Handful of fresh basil leaves
instructions
- Put all the ingredients for the dressing in a bowl and stir together.
- Place the peaches, apricots and sliced ​​ham on a large plate. Tear apart the burrata and add. Sprinkle with salt flakes, black pepper, and fresh basil, then spoon dressing on top with desired amount!
