Barnes & Noble launches vegan breakfast sandwiches

Barnes & Noble is embracing Earth Month by introducing vegan breakfast sandwiches in 500 of its bookstores nationwide! Delicious new offerings include Just Egg Folded, Violife’s gooey smoked provolone cheese and aioli on a ciabatta roll.

Bookstore fans can pick up delicious plant-based sandwiches available for a limited time starting April 10. Jason Arthur, Senior Cafe Buyer at Barnes & Noble said:

Expanding our menu to include more vegetarian-friendly options for our customers is a priority for our team, but equally important is finding the right plant-based options to offer.

This is the largest US Foodservice rollout to date for Eat Just’s vegan eggs. Just Egg Chief Revenue Officer Matt Reilly explained the partnership:

The opportunity to team up with this iconic brand to offer a completely plant-based sandwich means JUST Egg is now available in more than 3,000 restaurants and cafes across the US, including hundreds of cozy, inviting Barnes and Noble cafes. I, for one, can’t wait to pair my next good book with a delicious Just Egg Breakfast Sandwich.

Eat has been on a roll lately! In January of this year, 7-Eleven Canada debuted its first-ever plant-based breakfast item at 550 locations in British Columbia, Alberta, Saskatchewan, Manitoba and Ontario. The sandwich consists of just a folded egg, Impossible Sausage and slices of Violife cheddar-style on an English muffin. At the time, Riley said, “As we begin the new year, we’re proud to partner with 7-Eleven Canada to meet consumers’ growing appetite for delicious and convenient plant-based meals.”
