Here’s how to make a super-healthy red rice salad with salmon, Brussels sprouts, and grapes. The main goal here is to prepare a meal that’s brimming with heart-friendly omega-3 fats and anti-inflammatory compounds.
Eating anti-inflammatory foods can help with sudden skin rashes, intestinal irritation, or unexpected tiredness and fatigue. This salad combines oily fish, red rice, and grapes, all excellent anti-inflammatory foods[1]. Brussels sprouts are also great at reducing inflammation and are a rich source of antioxidants and gut-friendly fiber[2].
Our main concern was to prepare a healthy meal, but we didn’t want to sacrifice flavor and good taste.
Roasted Brussels sprouts and salmon are a classic pairing, and both pair really well with sweet grapes. Red rice is incredibly flavorful, so much more so than regular rice. If you can’t find it at your local store, you can opt for black or wild rice instead. Black rice shares many of the good qualities of red rice, such as being a rich source of antioxidants and anti-inflammatory compounds.
This salad has everything you want in a complete meal — carbs from rice, protein and healthy fats from fish, fiber and vitamins from veggies. One of our servings below will give you 20% RDI of carbohydrates, a solid 30% RDI of fiberAnd 20% RDI of fats (mainly healthy omega-3 fats).
That’s why we love one-bowl meals. You put everything on a plate and when the plate is clean you feel full and well nourished. They’re usually ideal for cooking in batches, but since this recipe includes fish, we recommend cooking no more than two days in advance. We hope you will enjoy our salmon rice recipe as much as we do. Have fun preparing!
