I’m not sure what the weather was like in your area. But here in California, I wish the weather kept up with the calendar. We should welcome spring and not have a prolonged winter. As I dream of warmer and slightly less wet spring days, I decided to make a list of my favorite macro-friendly spring salads. Look at her!
Waldorf salad with rocket and quinoa

This Waldorf Salad with Arugula and Quinoa! Drizzled with a creamy orange and basil vinaigrette? It’s crunchy, juicy, slightly salty, fruity… Such a winner for me!
I’m aware that a Waldorf doesn’t usually have tomatoes, and it usually has grapes… I’m pretty sure I’ve always eaten it with walnuts and not Marcona almonds… at best it’s a very LOOSE interpretation of the Waldorf. But that’s what I wanted when I made this, so in my mind it’s my macro-friendly Waldorf. just go with me
BBQ Salmon Salad

We like to eat this BBQ Salmon Salad as a complete meal for lunch or dinner… maybe both. It is so delicious! It’s also super tangy with the dressing, making it feel like a bright spring day. I also like to throw in a grain from time to time when I want a few more carbs. It ALWAYS makes this BBQ Salmon Salad more filling and delicious!
Wedge lettuce with creamy blue cheese

A wedge salad is so easy to put together, and since I associate it with fancy steakhouses, it always feels so fancy! This wedge salad with creamy blue cheese dressing really is one of our favorites. So easy, delicious, crunchy and of course macro friendly.
Of course you need a crunchy slice of fresh iceberg lettuce for the salad if you want to keep it classic. But we always have Romaine on hand, so we like to split Romaine’s mini heads in half and use that! Plus, all you need is your cherry tomatoes, bacon, red onions, and some radishes if you have them on hand. Top it all off with a drizzle of balsamic glaze and it’s perfection.
Salmon Romesco Salad

Salads are definitely one of my love languages. (I’m sure you can tell. Ha) Nothing beats a crisp and healthy salad full of all manner of toppings tossed in a large bowl. Who says we have to sacrifice flavor when eating healthy? Not me, that’s for sure! This Salmon Romesco Salad recipe is one you’ll want to add to your spring salad lineup.

A good Cobb salad will ALWAYS have my heart. In fact, there are a few Cobb salads in this spring salad series because it was too difficult to choose just one that brings the freshness of spring. They are so classic and satisfying.
This Cobb Salad with Creamy Lemon Basil Dressing is just so good! Think creamy, lemon, basil, buttermilk dressing and knowing it has all the flavors of your favorite cobb for great macro? It’s child’s play.
Summer chop salad with light champagne basil vinaigrette

I know what you’re thinking… “Why is there a summer cutlet salad in the spring salad list?” Let me finish. This salad may have summer in its name, but its light champagne vinaigrette is all you need to feel fresh and alive no matter what time of year it’s technically. Especially with this winter that we’ve had.
This Summer Chop Salad has the best, lightest, ONLY barely creamy Champagne Basil Vinaigrette smothered in all those little bits of crunchy veggies, sweetcorn (summer corn is why it’s named after summer), fresh herbs, and tossed in chewy little chunks of brown rice or farro… that’s all I want in a bowl right now.
Grilled Chipotle Chicken and Mango Cobb Salad

This Chipotle Grilled Chicken and Mango Cobb is a perfect EASY spring (or summer) night salad! If you have this delicious and SUPER LIGHT cilantro lime ranch on hand like I do, all you really need to do is grill some chicken and chop for a few minutes while it cooks! This leaves you with more time outdoors to partake in your favorite springtime activities.

Blackened Salmon Cobb

Taste salmon and cobb together and everything just gets better… and low carb doesn’t make me cry anymore. This Blackened Salmon Cobb is just so special because I threw in some of my ALL-TIME FAVORITE cheese (when I eat dairy, of course). The Trader Joe’s Toscana infused with Syrah. Do you have it?????? It’s heaven. For that full-fat, milk-loving life. Of course, you can also add your favorite non-dairy cheese and it makes an amazing salad to enjoy all spring long!
