These vegan puff pastry Easter nests with canned apricot halves are perfect for your Easter brunch! And the best part? You will only need three ingredients!

Preheat oven to 350°F/180°C.

Cut the puff pastry into 6 equal squares.

Place a tablespoon of vanilla soy curd in the center of each square and spread it slightly.

Fold in the edges and make a little basket or nest, leaving enough room for the apricot halves (we’ll add them after baking).

Place the puff pastry nests on a baking sheet and bake until golden, about 10-15 minutes.

Let them cool. Before serving, place an apricot half in each baked puff pastry basket.
