Our Vegan Jackfruit Po’ Boy has all the amazing flavors of the classic New Orleans sandwich, but with a twist fraction of fats. It’s perfect if you’re following or looking for a plant-based diet take healthier on this Louisiana-style submarine.
The traditional recipe consists of a French bun filled with deep-fried shrimp, topped with lettuce, tomatoes, dill pickles and drizzled with mayo-based tartar sauce. With a few simple tweaks, we turned this filling sandwich into a sandwich vegan-friendly and low-fat treat.
In our recipe, we coated jackfruit chunks with flavorful vegan buttermilk and panko breadcrumbs with Cajun spices. Then we baked the nuggets in the oven until crisp rather than deep frying to keep fat down. Finally we have one vegan tartar sauce Coconut yogurt used instead of mayo and flavored with whole wheat mustard and Tabasco.
The result is a delicious Po’ Boy loaded with hearty “meaty” nuggets and full of Creole flavors. We recommend using French baguette bread as it makes the perfect base for this sandwich with its soft crumb and crunchy crust.
Jackfruit is a staple ingredient in various Southeast Asian cuisines, such as India and Thailand, but you can easily find it in water or brine at grocery stores. It has a fairly neutral taste and fleshy texture, ideal as a meat alternative in vegan recipes. We’ve found jackfruit to be absolutely perfect for our Po’ Boy as it takes on all the Cajun spice flavors.
