First, preheat the oven to 350ºF and line a baking sheet with parchment paper.

Next, melt coconut oil and place in a medium-sized bowl. Then add peanut butter, honey and vanilla and mix until smooth.

Add the oatmeal, peanuts and salt and mix everything together. Your mixture should be wet, but not cookie dough wet! So if you need to add more oats, do so here!

Pour the batter onto the baking sheet and spread as evenly as possible.

Bake at 350ºF for 12 minutes. Remove the baking sheet and toss the granola. Then place back in the oven and bake for another 10 minutes or until golden brown.

Remove and let cool for 30 minutes before adding the chocolate chips.
