We love coming up with new muffin recipes as we have so much fun trying new flavors. So today we decided to brighten up your day with the magic of these vegan panda muffins. Sweet, colorful and with beautiful tropical notesdefinitely worth jumping out of bed for.
We made them with oat flour, rice flour, sweet mashed bananas, and creamy coconut yogurt. Just add a few drops of panda essence and you have a beautiful light green dough. These delicious muffins are vegan, gluten free and sugar freesure for everyone to enjoy!
After trying panda essence in our jelly and pancake recipes, we decided to use it again, this time to make some gorgeous muffins. Pandan is a tropical leaf the leaves of which are either powdered or juiced into a paste-like extract. It’s a staple ingredient in both sweet and savory recipes throughout Southeast Asia.
You can find panda essence at your local Asian grocery store or buy it online. It comes in bottles as a dark green paste, and just a few drops are enough to add a rich green hue to sweet treats. Pandan also adds a delicate floral and grassy taste with a touch of vanilla. We just love it!
While classic muffins are made with butter, eggs, and sugar, we decided to give you one healthier, plant-based version. We swapped butter and eggs with rich coconut yogurt and refined sugar for bananas. Be sure to use very ripe bananas as they are much sweeter. When their skin is covered in brown spots and they feel very soft, you know they’re ready to use.
These squishy panda muffins are simply delicious, but you can brush them with maple syrup and sprinkle with coconut flakes to take them to the next level! Enjoy them for breakfast, perhaps with a tropical smoothie on the side, or bring them with you as a sweet treat on the go.
