After many sweet oatmeal recipes, we looked at a savory Indian breakfast porridge called porridge upma and I came up with a delicious variant. Classic upma consists of dry roasted semolina braised with lentils, onions, tomatoes and peas. It is often flavored with mustard seeds, ginger, turmeric and chilies.
For our Indian porridge, we swapped out semolina for jumbo rolled oats and added mung dal and black mustard seeds. We cooked them creamy and golden with coconut milk drink and curry powder. Finally, we topped the oatmeal with fresh mango, cherry tomatoes, and roasted cashews.
