This is an old favorite of mine that I have returned to countless times and I bet you will too!

2. Mediterranean Diet Tuscan Soup
The Mediterranean Diet is my favorite and officially the best diet for two years in a row. How can you make it even better? By making it plant-based! This is a warming, hearty soup that’s packed with flavor and packed with nutrients to fuel your day, making it a perfect vegan soup to enjoy on its own or enchant dinner guests. Two tablespoons of The Fit Cook Country Seasoning pulls all the flavors together, but the freshly chopped basil makes this an excellent summertime option.

3. Best Low Carb Vegan Street Tacos
Vegan street tacos? You know it! In this recipe, I use cauliflower and walnuts (trust me) to fake the meat. These tacos are packed with warmth and nutrients that will keep you full long after you’ve eaten. You may have to stop and start your food processor and mash things up a bit over time to get the right texture. But the real bonus? You can taste the “meat” as you mix it up and adjust your seasoning to get it just right👌.

Who said tacos are only on Tuesdays? Let’s keep the taco train rolling! I LOVE cheap crockpot recipes – you can assemble the ingredients and go away for a few hours, saving you time AND money. However, one of my favorite things about this recipe is the saltiness of the bulgogi that mixes with the spiciness of the tacos; it’s guaranteed to trick anyone’s taste buds!
5. Dairy Free Brown Rice Risotto Meal Prep
I often hear people considering a plant-based diet say they’re afraid they’ll miss out on some of their favorite foods. But I think by now we’ve proven that there is a solution for almost every recipe, including risotto. This makes a great side dish or a standalone meal and is one of my favorite vegan meal preps from fitmencook.com. The trick? Using nutritional yeast to give the risotto its signature creamy, cheesy texture.
