I believe the key to a delicious salad is in the dressing, and this one hits the spot. The rest boils down to the skillful combination of healthy ingredients. The only thing you need to chop is literally the scallion. As simple as that!

Tip: To save time, buy a fried chicken at your local supermarket or chicken store. For a plant-based option, replace the chicken with tofu or tempeh as a protein source.

Ingredients:

For the salad:

Vermicelli⁠

Ready-made vegetable and herb mixture⁠

Shredded Chicken⁠

Spring onions⁠, chopped

Frozen Edamame⁠

For the dressing:⁠

1 tablespoon tamari⁠

1 tsp sesame oil⁠

1 tsp maple syrup⁠

1 tsp Sriracha⁠

1 tsp white wine vinegar⁠

Sprinkle sesame ⁠

Optional Extras:⁠

Fried onions⁠

Additional sesame seeds⁠

Method:

  1. Cook your pasta according to package directions, tossing in the edamame at the last moment to thaw. Rinse under cold water to refresh and cool.
  2. Mix the remaining salad ingredients in a bowl.
  3. Mix the dressing by tossing everything into a jar and shaking vigorously.
  4. Pour the dressing over the salad and top with extras if you like.
