Quick and Simple Chocolate Rice Cakes Snack
TikTok is at it again with a super simple, moreish treat. These chocolate rice cakes are a truly easy and delicious snack made using ingredients we know taste good together: chocolate and peanut butter.
It’s a combination I love so much, I’ve enthusiastically shared recipes for peanut butter crunch bars, peanut butter oatmeal balls, and peanut butter chocolate cups over the years, but now it’s time for the simplest one yet.
Using just three ingredients and a few minutes of your time, this chocolate rice cakes recipe has you melt chocolate and peanut butter, toss them into crumbled-up rice cakes, chill, and enjoy. I’ve also included a method for spreading the toppings instead, to make individual dessert rice cakes, if that’s what you’d prefer.
The result is a crisp, slightly chewy, sweet, delicious snack perfect for satisfying sweet cravings in a healthy (ish) way, great for portioning into lunch boxes and any snacking occasion, and far more cost-effective than buying grocery store chocolate rice cakes!

The Ingredients
- Rice cakes: Make sure to use plain rice cakes – regular white rice or wholemeal/ whole grain brown rice crackers.
- Vegan chocolate: I prefer dark chocolate (chocolate chips or a block) to make this chocolate rice cakes recipe a healthier treat. Keto (sugar-free) chocolate will also work.
- Peanut butter: Use smooth or crunchy peanut butter or another nut/ seed butter (like almond butter, cashew butter, sunflower seed butter, etc.). This adds flavor and a protein boost.
Extra Topping Ideas
There are several toppings you could either mix into the melted chocolate-rice cake mixture or sprinkle over the top of the chocolate drizzled rice cakes before chilling.
- Flaky sea salt: To balance and enhance the chocolate.
- Crushed nuts: Peanuts, hazelnuts, pistachios, etc., for crunch and nutrients.
- Cacao nibs: Add mega crunch and PLENTY of antioxidants.
- Dried fruit: Raisins, goji berries, chopped dates, etc., for bursts of sweetness.
- Shredded coconut: For extra texture and flavor.
- Freeze-dried fruit: Sprinkle over the top, so they don’t go soggy, for extra color and sweet-tart flavor/ nutrients.

How to Make Chocolate Rice Cakes
- First, melt the chocolate and peanut butter using a double boiler method (in a heat-proof bowl set over a simmering pan of water) or microwave (in a microwave-safe bowl in 15-20 second increments, stirring in between).
- Meanwhile, break the rice cakes into small pieces (about 1 inch/ 2.5 cm) in a medium bowl.
To make more of a rice cake treat ‘slab’ that you can break into pieces, crush the rice cakes into small crumbles.
- Pour the chocolate mixture over the rice cakes and toss to coat evenly.
- Then spread the chocolate coated rice cake bites evenly across a parchment paper-lined plate/tray and refrigerate (or freeze) until the chocolate sets. Enjoy!
Alternative Methods
For such a simple rice cake dessert, there are several ways to prepare it. For example:
Instead of the above, you could leave the rice cakes whole and dip one side into the melted chocolate-peanut butter mixture, then leave to chill and harden.
ALTERNATIVELY, spread the peanut butter over the rice cakes first, then dip or spread the melted chocolate over that. Using the latter method, you could even ‘sandwich’ extra peanuts, banana slices, berries, or other ingredients between the PB and chocolate layers.
How to Store Chocolate Rice Cake Bites
Allow the chocolate rice cakes with peanut butter to fully chill and set, then store any leftovers in an airtight container in the refrigerator for up to 7 days.
FAQs
Are chocolate covered rice cakes healthy?
It really depends on what you personally consider ‘healthy.’ Some people would say that no chocolate is healthy. However, when combining plain rice cakes with peanut butter and antioxidant-rich dark chocolate, these chocolate bites are a fairly balanced snack with plant-based protein, heart-healthy fats, and just a little sugar (unless you use sugar-free chocolate). In other words, the key is to enjoy them in moderation.
How long will the rice cake bites take to set?
Because the peanut butter is combined with the chocolate, it will take slightly longer to set than regular chocolate. I recommend popping them in the freezer for about 20 minutes.
Recipe Notes and Tips
- Don’t scorch the chocolate: I prefer a double boiler over the microwave method when melting chocolate for that very reason. If you use a microwave, check on it every 15-20 seconds.
- Experiment with toppings: Feel free to adapt the recipe in any way you’d like with extra mix-ins/toppings like crushed nuts and dried fruit to add extra flavor, texture, and/or nutrients.
