I’ve always loved eggs. Not only are they delicious and versatile, but they’re also nutritionally valuable (packed with protein, iron, and other vitamins and minerals!). Since I have a lot of delicious egg recipes on my blog, today I want to share some of my favorite sweet and savory brunch recipes with eggs!
Brunch ideas with eggs
You can’t go wrong with a veggie frittata or a hearty omelet, but I’ve also included some brunch ideas below you might not have heard of, like hearty oatmeal with mushrooms and avocado or baked quinoa with berries and lemon.
There are many delicious egg brunch recipes to choose from – it all depends on what you’re craving and/or what time of year you’re experiencing! Now let’s get to the list.

Simply prep the ingredients in your slow cooker insert the night before, leave in the fridge overnight, then turn on to cook in the morning.
I love this French toast casserole with blueberries, bananas, pecans and a drizzle of maple syrup. But you can use whatever you like!
Lemon pancakes with ricotta
Ricotta cheese and eggs make these lemon pancakes super fluffy! They’re bursting with lemon flavor and topped with an easy blueberry chia jam that goes deliciously with it.
These are particularly good for spring and summer, but can also be enjoyed all year round.
Baked oatmeal with bananas
Easy baked oatmeal with ripe bananas, chopped nuts, cinnamon, applesauce, raisins (or other dried fruit) – what’s not to love?! Warm and comforting, it can be topped with fresh fruit and/or a drizzle of nut butter.
Cranberry Orange Bread
I love this bread in the winter and on the holidays!
It’s super festive, packed with cranberries and zesty orange, plus chopped pecans for the crunch. It’s lightly sweetened and made with whole wheat flour!
Banana Pumpkin Spice Pancakes (gluten free)

Warmly flavored and comforting, they’re delicious with a drizzle of Greek yogurt and/or a drizzle of maple syrup.
Berry quinoa casserole with lemon
