I love zucchini (especially in summer) so I’m excited to share a roundup of my favorite zucchini recipes from my blog!
Most of these recipes are savory recipes—mainly for breakfast and dinner—but there are a few sweet zucchini recipes included too! And they’re all delicious, don’t worry. 🙂
Nutritional benefits of zucchini
Zucchini is high in vitamins A, C, and B6 (which play a huge role in regulating blood sugar and preventing diabetes). It also contains potassium as well as many other minerals and antioxidants.
When is zucchini in season?
Zucchini is considered a summer squash and is in season in the United States during the summer (May through September). However, you can often find it all year round!
Tips for cooking with zucchini
Here are a few helpful tips for preparing zucchini:
- To keep the courgettes from becoming soggy, slice them and sprinkle with salt (not too much, just a pinch). Leave to rest in a colander and drain for half an hour. The salt will help draw out some of the excess moisture before cooking.
- If possible, leave the zucchini skin on. This is where most of the nutrients come from – it also provides the taste!
- Zucchini can be sautéed, roasted, or even grilled. It takes flavors well too, so add some oil and your favorite flavors/spices like garlic, lemon, parmesan, paprika, etc! Just be careful not to add TOO much oil as zucchini absorbs the oil quickly and you don’t want it to end up being very greasy.

Here’s another one of our favorite zucchini meals: Mediterranean sheet pan chicken thighs! This dish is so flavorful and full of veggies, and the chicken turns out super juicy.
This is a huge hit with my extended family – we always make it at get togethers because everyone loves it and it’s easy to make and hard to screw up.
Fresh lemon juice spices up the dish even more. Feel free to swap out the veggies for your favorite veggies!
Vegan minestrone soup
Minestrone soup is a classic for a reason, and this version is just as delicious but extra nutritious! It’s packed with veggies like zucchini, kale, carrots, and bell peppers, along with kidney beans and whole wheat pasta.
Fresh basil also adds a delicious depth of flavor to the tomato broth – I highly recommend not leaving it out!
Garlic Sheet Pan with Chicken and Vegetables
The whole family will love this Baked Garlic Chicken Sheets with Broccoli, Peppers, and Zucchini! All you have to do is toss everything on a sheet pan and toast.
Serve with quinoa or your favorite carb and you have a filling, nutritious meal!

I’m a big fan of barley – it adds a wonderful chewy flavor to any meal! This Barley Chili with Ground Turkey and Vegetables is a must-try. It’s easy to prepare and super soothing.

This is the perfect soup for clearing out your vegetable drawer! You can basically add any vegetable and/or legume and it will be delicious. And, of course, zucchini goes well with it. 😉
Plus, this soup is made in an Instant Pot, so it’s quick to make and doesn’t require much manual effort aside from chopping the veggies. Always a win for me!
